Create Custom Menus for Personal Dining, Events with Center of the Plate Catering Service

When Rachelle White was asked to cater her friend's wedding, the customer service and event planning aficionado said most companies would have shied away from the event or failed to successfully follow through. However, under challenging conditions, White pulled off a six-course dinner for 150 wedding guests, complete with a nacho bar and sundae station. What started as a wedding gift for a friend ultimately became a full-time business in July 2010 when Center of the Plate was started in Lansing, MI.

"As a full-service custom caterer, I work with my clients to create a menu that suits each event, desired flavors and budget," White said. "Rather than provide an over-abundance and overwhelming menu selection, I like to personalize each client's experience to produce a menu they will love. If you can dream it, we can do it."

White said, for that reason, her menu online is often outdated. New menus are created almost daily. She also willingly caters to those with food challenges, including allergies and extremely large events. She focuses on creating these custom menus than stay within a client's budget.

"We provide high-level service at competitive rates," White said. "Whether the need for catering is for a corporate function, life event [or] celebration, intimate dinner, or meal delivery service, Center of the Plate is flexible to meet your catering needs."

On her sample menus, White offers buffets, dinners and lunch boxes. For buffets, clients can choose from four types of chicken, rosemary and garlic pork tenderloin, and fajita steak with peppers and onions. Pasta buffets are also an option with baked macaroni and cheese, beef stroganoff, pasta with a variety of sauces, pasta salad and pasta primavera. Sides include herbed potatoes, mashed potatoes, sweet peas with mushrooms, green beans with almonds and buttered corn.

The dinner sample menu includes three courses: salad, entrée and dessert. Salads can include a raspberry and mixed green salad, arugula salad or a classic Caesar. The entrée course includes a choice of pork chops, salmon, chicken marsala or Italian shrimp pasta. For desserts, White includes fresh-baked and homemade cookies and coffee, a warm apple crostada or mini chocolate shells with various fillings.
