Chive Kitchen Cooks Up Vegan Dishes That Appeal to Everyone's Tastes

Suzy Silvestre, Owner of Chive Kitchen, is doing things a little differently at her Farmington, Michigan eatery. Looking to bring only from-scratch meals to her tables, Silvestre created a perfect pairing of Mexican and Western European cuisine with traditional comfort foods, leaving behind a menu unlike any other.

"We are a scratch kitchen and our goal is to bring fresh, natural ingredients into dishes with big flavor," Silvestre states. These flavorful dishes include options such as the Tostada, a crispy tortilla topped with refried lentils, cilantro corn coleslaw, fresh salsa and avocado-garlic cream as well the Jalapeno Burger with house-made seitan and cannellini bean patties crispy onions, fresh house-made guacamole, cashew nacho cheese and pickled jalapenos.

In addition to providing fresh ingredients to the menu, Silvestre aimed to keep the selections vegan, while maintaining unique flavors that would appeal to a wide range of guests- meat lovers included. "We have many customers who are unaware that we are a vegan restaurant," she states.

"We want to appeal to people who love food and appreciate fresh and locally sourced ingredients, not solely vegans. For those who are reluctant to try a vegan restauraut; I love tellin them to try something new- such as a craft cocktail made with Michigan spirits and a plate of nachos. They will be pleasantly surprised."

Looking past the food, the eatery focuses on a unique, comforting environment for guests to enjoy their meal. With her Portuguese roots, Suzy tried to create a space that reminded her of sleek western European design as well as a space that was inviting and comforting. "We really take pride in our ambiance and hope we are reflecting an atmosphere that anyone can enjoy", Suzy states.

The core demographic for Chive Kitchen varies widely; from students and families, to couples on date night, groups of friends, baby boomers and seniors. . "We love that Chive offers something for everyone; a diverse crowd reflects my San Francisco Bay Area upbringing" Silvestre announces.

Currently, Chive Kitchen is open Tuesday through Thursday from 11 am to 10 pm, and Friday and Saturday from 11 am to 11 pm. Chive Kitchen also offers private parties on Sundays and has plans to open up for breakfast in the future. The best place to follow Chive Kitchen is on Facebook for the latest happenings.
